I've always liked mascot names that actually make some sense historically, culturally, geographically, etc. Off the top of my head here are a few that I appreciate for their appropriateness:

Tennessee

Miami

Texas

FSU

USF

Oklahoma

UCLA?

Not sure there are any Bruins/Bears in LA, But there is near Cal Berkeley so add the Cal Bears.

Being a Vet, The Service Academies have always been an interest to me.

US Army Black Knights  Mascot:  The Mule

Originally nicknamed "Black Knights of the Hudson" because of the dark color of the uniforms.  Since 1899 the mule has been the West Point mascot promoting the spirit of the Corps of Cadets. Mules were very important to the Army in the late 1800s through World War I. While not regular cavalry mounts, mules were used extensively to pull supply wagons, caissons, and artillery pieces. Mules are stronger, more surefooted, more intelligent, and eat less than horses.

US Navy Midshipmen  Mascot: The Goat

A midshipman is an officer cadet in the United States Navy.For centuries, ships sailed with livestock in order to provide sailors with fresh food, and ships in the British and early American navies often carried goats, to eat the garbage and other undesirable food, and return milk and butter.

Air Force Falcons

Members of the Class of l959, the first to enter the Academy, chose the falcon as the mascot of the cadet wing Sept. 25, l955, feeling that it best characterized the combat role of the U.S. Air Force. They did not specify any particular species, thus, any falcon can serve as mascot. Some of the characteristics which led to its selection were speed, powerful and graceful flight, courage, keen eyesight, alertness, regal carriage, and noble tradition. The falcon exemplified the qualities sought in Air Force Academy cadets; courage, intelligence, love of the wild sky, ferocity in attack, but gentle in repose - and discipline.

And ya got to luv 'em:  UC Santa Cruz - Banana  slugs

That one is logical coming from the students of a California university.  The Banana Slug, a bright yellow, slimy, shell-less mollusk commonly found on the redwood forest floor, was the unofficial mascot for UC Santa Cruz coed teams since the university's early years. The students' embrace of such a lowly creature was their response to the fierce athletic competition fostered at most American universities.

What's the story with Virginia's mascot?

The Cavalier mascot is a historical reference to the time when the Commonwealth of Virginia earned its nickname, the "Old Dominion." The Commonwealth was a hotbed of persons loyal to the English crown, called cavaliers in the days of the English Civil War and Interregnum.

Is Idaho's mascot named after the Germanic tribe that sacked Rome in 455 or are they just a bunch of miscreants that vandalize everything?  :dunno:

Not mutch to Vandalize in Idaho, most of the state is High desert plains with Cow farms to the south of Boise and potato fields to the north where it's more mountians and forests. So can't answer that one for you.
